Paniego recreates his surroundings, be they La Rioja or the scenery of the small country in the Pyrenees.
Francis Paniego's cuisine has always been deeply rooted in the territory, and he has carried this off at Portal de Echaurren, but he just could not resist doing the same at Ibaya, his restaurant in Andorra. Along with Jordi Grau, Paniego's mountain cooking means a gaze beyond the windows of the Spa Hermitage. A gaze at the Pyrenees, a mountain range he shares with his native La Rioja.
