In this talk, Miquel Canturri sets out to bring us up close and personal with one item largely omitted from discussions of mountain cookery: fish.
The chef at Minim’s in Andorra La Vella will introduce us to the world of mountain fish and all its gastronomic potential. Although it is true to say that when we talk about mountain cuisine we think about traditional no-nonsense recipes with a substantial meat content, we should not forget the huge role played by rivers and fish in the diet of those living at a certain altitude.
Canturri takes us on a tour of mountain fish and a host of ways to convey them from the river to the table.
