Extreme closeness to nature for elegant rural cuisine in Sweden and Slovenia
These are projects that seek their raison d'être in nature. Projects of author, that move away from the wellbeing of the city and enter into the adventure of exploring unknown territories. The speakers at the first Andorra Taste event include Danish writer and gastronomy stylist Mette Helbæk and her chef husband Flemming Schiøtt Hansen, (Rest. Stedsans in the Woods, Hyltebruk, Sweden). In 2016 this couple gave up a comfortable life in the city of Copenhagen for a remote section of the virgin Swedish forest Hytebrik to create their Stedsans in the Woods project, a gastronomy tourism complex right next to nature, offering food made with ingredients found only a few metres from the table, along with Bedouin tents and wooden cabins by way of accommodation. A location conceived as a "laboratory to find better ways of eating, living and being at one with nature".
Another example of connecting with nature Ana Roš (Hiša Franko** Kobarid, Slovenia), one of the world's best female chefs, is another of the main features at Andorra Taste 2022. Declared the world's best female chef in 2017 by The World's 50 Best Restaurants, this self-taught cook has turned her restaurant in Kobarid, a village with a population of 200 only two kilometres from Italy and thirty kilometres from Austria, into one of the world's greatest international gastronomy destinations, where 90% of the customers are foreigners. Her elegant rural cuisine is rooted in the spectacular natural setting of her Alpine environment, the Soča Valley.
